Keto Chicken Quesadilla

Would you believe I had never had a quesadilla before I moved to Texas? I have certainly made up for lost time since my arrival! Crispy tortillas, melty cheese and savory chicken! What's not to love? Great snack or easy dinner! Ole'!

Ingredients
  

  • 2 Zero carb Tortillas
  • ⅓ cup Monterey Jack cheese
  • 2 oz chicken (shredded)
  • 1 tbs butter
  • ⅕ tsp Goya Adobo seasoning

Method
 

  1. In a ring pan,lightly brown chicken in butter and Adobo seasoning.
  2. Remove from pan and wipe out with paper towel.
  3. Spray pan with cooking spray and place tortilla in pan. Top with cheese and chicken. Top with second tortilla and press down gently.
  4. Cook over medium heat till cheese is starting to melt and tortilla is slightly brow.
  5. Flip quesadilla and cook till lightly brown on this side.
  6. Dip in sour cream and enjoy!!
