- I always bake my bacon. I cover a rimmed sheet pan with foil, line up my bacon, and bake on 325*F for 15 or twenty minutes. Drain bacon on paper towels and rough chop.
- In a small bowl, whisk mayo, lemon, and oil until combined. Add chives and salt and pepper to taste.
- Arrange lettuce, tomatoes, bacon, avocado, and croutons on a platter for a fancy look, or toss in a salad bowl. Top with croutons and dressing.
