Follow recipe on the back of the Ketonia Bread mix and set aside 4 slices of bread.
In a bowl of a stand mixer, whisk egg whites, swerve, allulose, and cream of tartar.
Place the bowl over a sauce pan with 2 inches of simmering water. Do not lt the bowl touch the water.
Whisk constantly until sweeteners are dissolved and the temperature reaches 160* on a candy thermometer. This will take 4 or 5 minutes.
Remove from heat and add vanilla.
Using a whisk attachment, beat on high speed until stiff peaks form.
While you warm your panini press, prepare your sandwiches. On two slices of bread, spread Legendary peanut butter.
On the other two pieces, put a dallop of marshmellow cream in the center on the bread.
When you close the sandwich, the marshmellow will ooze to the edges.
Set the sandwiches into the heated panini press and carefully close the lid.
Toast your sandwich until you have acheived your desired tostiness. We did ours on “Dark” for about 2 minutes. Embrace the ooze and enjoy!
