- Shape sausage into a square roughly the size of your bread. Fry in a nonstick pan a few minutes per side until cooked through to 160°F. Remove and wipe pan clean.
- Whisk 2 eggs with cream, dill, salt, and pepper in a shallow bowl. Soak each bread slice briefly on both sides.
- Melt butter over medium. Pour remaining egg mixture into the pan and immediately add both soaked bread slices with the bottoms touching. Cook until egg mixture is firm around and under the bread. Using 2 spatulas, flip bread and eggs together to brown the other side - this takes practice and the first attempt may not be pretty. That's okay, it's going inside the sandwich.
- Top each bread-egg piece with 1 cheese slice, then sausage, then a second cheese slice. Fold the egg portion over the bread top. Stack the two pieces together and press gently. Cook on low until cheese melts. Serve immediately.
