- Heat olive oil in instant pot on sear. Generously salt and pepper the roast. Sear for 3-4 minutes per side or until nicely browned.
- Add the rest of the ingredients. Change setting to braise and cook for 2.5 hours or until fork tender and shreddable. Check every once in awhile and add more stock as necessary.
- Shred beef with a couple of forks. Or do what I did, which is toss all the meat in your Kitchen Aid and shred it using your paddle attachment on medium high speed till shredded. Then return it to the pot with the juices and stir.
- Serve With veggie rice or Cauliflower Mashed potatoes or on keto roll! Garnish with more peppers if desired
