Keto Shrimp and Sausage Skewers

Skewers! A short and sweet backyard BBQ staple! This shrimp and sausage medley is kept moist by brushing it with a spicy mayo mixture that keeps the shrimp from drying out. Double the sauce and put aside some for dipping! This is a great appetizer for a summer pool party!

Ingredients
  

  • 1 lb shrimp (peeled large)
  • ½ lb smoked sausage
  • ¼ cup Mayonaise
  • 1 chipotle (minced)
  • 1 tsp Smoked paprika

Method
 

  1. Soak skewers in water for 20 minutes before assembly.
  2. Preheat grill to medium high.
  3. Skewer sausage and shrimp alternating direction of shrimp on each sausage. Or don't. It just looks prettier!
  4. Depending on the size of your shrimp, you can get 4shrimp and sausages per skewer and 6- 8 skewers.
  5. Brush both sides of skewer with mayo mixture.
  6. Place on hot grill for 3 minutes per side, turning once. Cooking time will depend on shrimp size. Shrimp will curl up and become opaque when done.
  7. Remove from grill and serve immediately with dipping sauce on the side (if using).
