Method
- Preheat oven to 425*
- Weave bacon into a square and place over an upside-down cupcake tin. Place the tin on a rimmed sheet pan covered in tin foil. Bake for 14-20 minutes or until bacon is the desired crispiness. Remove and drain on paper towels.
- On medium-high heat, melt butter in a small nonstick pan. Combine all ingredients and stir eggs in a figure-eight motion. I stir for a bit till they start to cook, then remove from heat and continue stirring. Take the cooking pan on and off heat till the desired consistency.
- Divide eggs between bacon baskets and serve!
