Method
- Preheat oven to 425*
- You can eat the skin of the squash, but I prefer it peeled. Place the squash in the microwave for a minute. This helps make peeling and slicing easier. I peel the squash just like I would a potato, with a vegetable peeler.
- Once peeled, slice the squash in half and remove seeds. Slice each half in half and then cut into 1-inch slices. Don't go too thin, they will burn!
- Toss “fries” into a bowl with the oil and mix with your hands making sure each slice is coated with oil.
- Spread out on a baking sheet covered with foil (easy cleanup!) and sprinkle with Salt and pepper or desired seasonings.
- Feel free to play with other spice combinations as this recipe allows you to be creative!
- Then bake 20 to 30 minutes, or till golden brown!
- While baking, stir together the mayo and sriracha for a spicy dipping sauce!
