Keto Quarantini

A sophisticated gin cocktail with a lemon basil simple syrup and a Jack Daniels honey float. The keto simple syrup uses erythritol and xanthan gum - keep a jar in the fridge for all your cocktail needs.

Ingredients
  

  • Quarantini
  • 90 ml good gin 3 oz, Bombay recommended
  • 45 ml lemon basil simple syrup 1.5 oz, recipe below
  • 1 tsp fresh lemon juice about 1/4 of a lemon
  • 1 tsp Jack Daniels Tennessee Honey to float on top
  • Lemon Basil Simple Syrup (makes about 1 cup)
  • 240 ml distilled water 1 cup
  • 100 g erythritol 1/2 cup, Swerve or equivalent
  • 0.25 g xanthan gum 1/32 tsp
  • 0.5 lemon, zested with no pith
  • 10 fresh basil leaves, chiffonade

Method
 

  1. Make the simple syrup: Whisk erythritol and xanthan gum together until combined. Add water to a saucepan, whisk in erythritol mixture. Bring to a boil whisking continuously. Once boiling, lower heat slightly but maintain a boil. Do not whisk once boiling - use a wet pastry brush to wipe down any crystals forming on the inside of the pan. Boil until the mixture is completely clear, a few minutes. Remove from heat, stir in lemon zest and basil. Cover and steep until cool. Strain into a tight-lidded jar. Keeps refrigerated for at least a week.
  2. To make the cocktail: Combine gin, simple syrup, and lemon juice in a shaker with ice. Shake briskly.
  3. Strain into a martini glass. Gently pour the Tennessee Honey over the back of a spoon to float it on top. Garnish and enjoy.

Notes

The plain simple syrup without lemon and basil is a great keto bar staple to keep on hand for any cocktail. Nutrition is estimated and does not include alcohol calories in the standard carb count - gin has approximately 97 calories and 0 carbs per 1.5 oz.
