Prepare bread mix according to directions.
After the first 30 minute rise, roll the dough into a rectangle, roughly 12 X 18.
Cut into 9 smaller rectangles, 4 X 6.
Lay 6 to 8 slices of pepperoni on each rectangle depending on how thick it is and how meaty you want it..
Lay 1 mozzarella on top.
Roll to close, pinching ends to seal. .
Lay on the baking sheet seal side down
Cover with a towel and let rise 30 to 40 minutes.
Melt butter with Italian herbs. Brush tops with butter mixture. Sprinkle with Parmesan.
Bake for 20 to 30 minutes or till GBAD (Golden Brown and Delicious- for our newcomers)!
