Keto Pepperoni Pizza Hot Pockets

Hot pockets are a staple of childhood. Simple, easy, and not always delicious… but when we are that age all we care about is simplicity and speed in preparation for a snack. Using our Ketonia Bread Mix, we take you back to your childhood with our simple and always delicious Keto Keto Pepperoni Pizza Hot Pockets.

Ingredients
  

  • 1 Ketonia Bread Mix
  • 1 cup of water
  • 1 tsp honey
  • 1 tbs instant yeast
  • 2 eggs
  • 2 tbs softened butter
  • 8 oz pepperoni
  • 9 mozzarella sticks
  • 1 tsp Italian herbs
  • ¼ cup grated parmesan (the parmesan in the green can is fine as well!)
  • 2 tbsp butter
  • Rao's Marinara (for dunking, of course!)

Method
 

  1. Prepare bread mix according to directions.
  2. After the first 30 minute rise, roll the dough into a rectangle, roughly 12 X 18.
  3. Cut into 9 smaller rectangles, 4 X 6.
  4. Lay 6 to 8 slices of pepperoni on each rectangle depending on how thick it is and how meaty you want it..
  5. Lay 1 mozzarella on top.
  6. Roll to close, pinching ends to seal. .
  7. Lay on the baking sheet seal side down
  8. Cover with a towel and let rise 30 to 40 minutes.
  9. Melt butter with Italian herbs. Brush tops with butter mixture.  Sprinkle with Parmesan.
  10. Bake for 20 to 30 minutes or till GBAD (Golden Brown and Delicious- for our newcomers)!
  11. Dunk in Rao's Marinara and enjoy!
