Preheat oven to *350
Cream butter and brown sugar in stand mixer till light and fluffy.
Added and mix till fully incorporated.
Add mix, ginger, cinnamon, baking powder and salt. Starting on low speed mix till combined and dough comes together.
Roll dough out on parchment papaerto prevent sticking, to a ¼ inch thickness. Cut out gingerbread men and place on parchment lined sheet pan.
Decorate with sugarless candies like chocolate chips.
Bake for 8-10 minutes or till just starting to brown. Cool.
Meanwhile make your icing. Whisk together powdered swerve and egg white till smooth. You can add a bit more swerve if its too thin or a few drops of lemon juice it it's too thin. Place in piping bag or zip lock bag. Cut a small hole in the bottom with scissors. Get your Jolly on and decorate your gingerbread men!
