Keto Fluffernutter Sandwich

This is the stuff of childhood dreams. This Yankee girl would have lived on fluffernutters if my mom had allowed it. I spooned this stuff directly into my mouth while working on the recipe.  I was the guinea pig. (It's a tough job but someone has to do it!) So. Good. Enjoy this Keto Fluffernutter Sandwich!

  1. In the bowl of astand mixer, whisk egg whites, sweeteners and cream of tartar. Place the bowl over asaucepanwith 2 inches of simmering water. Do not let the bowl touch water. Whisk constantly until sweeteners are dissolved and the temperature reaches 160* on acandy thermometer. This will take 4 or 5 minutes. Remove from heat and add vanilla. Using whisk attachment, beat on high speed till stiff and glossy.
  2. Spread peanut butter thickly on 1 slice of bread. Spread fluff on the other side. Put slices together. Eat. Repeat.
