Method
- In the bowl of astand mixer, whisk egg whites, sweeteners and cream of tartar. Place the bowl over asaucepanwith 2 inches of simmering water. Do not let the bowl touch water. Whisk constantly until sweeteners are dissolved and the temperature reaches 160* on acandy thermometer. This will take 4 or 5 minutes. Remove from heat and add vanilla. Using whisk attachment, beat on high speed till stiff and glossy.
- Spread peanut butter thickly on 1 slice of bread. Spread fluff on the other side. Put slices together. Eat. Repeat.
