Keto Croissants: Bacon & Cheese

These keto breakfast croissants are a great way to jumpstart your day, giving you the energy you need to kick start your busy life. As with most of the recipes I post, this one takes a bit of time, but it’s not difficult. You can even make the dough a day or two ahead and refrigerate it. Then all you have to do is assemble and bake.

  1. Follow recipe forKetonia's croissant dough. After the 6th and final turn, prepare your breakfast fillings while your dough chills.
  2. Cook the bacon to your desired crispiness then dice into small pieces. Slice your cheese horizontally 3 times, creating 4 equal sections. Then cut once vertical down the middle, creating 8 equal sections.
  3. Roll our your croissant dough into a thin rectangle about 1/4 inch thick. Divide into 12 equal rectangles, approximately 3in x 4in. Lay 4 small pieces of cheese on the top 1/3 portion of the rectangle and cover with bacon pieces. Fold the croissant dough over the cheese and bacon and pinch the seam closed. Set the rolled croissants on a baking sheet lined with parchment paper, seam side down. Cover and let rest for 1hr.
  4. Preheat your oven to 375*.Brushcroissants with egg wash and bake for 17-20 minutes. Tear and enjoy all those flakey layers!
