Preheat oven to 400*
Cream butter and ¾ cup Swerve with hand mixer or in Kitchenaid.
Add egg, mix till incorporated.
Add remaining ingredients. Mix till combined.
Place dough in cookie press. Choose desired shape and press cookies according to cookie press instructions, on parchment lined sheet pan.
Bake until set but not brown, about 6 to 10 minutes. Keep your eye on them!
Stir together ¼ cup swerve and a few drops of desired food color in small bowl. reserve for topping hot cookies.
If desired sprinkle with colored swerve immediately upon removing from oven.
