Break the eggs into a small bowl, check for any eggshells! Always crack eggs on a flat surface, you will get fewer eggshell bits than if you crack them on the edge of the bowl.
Place a small non-stick saute pan over medium-high heat, and add eggs and butter. Stir until eggs start to solidify and butter starts to melt. Remove from heat constantly while constantly stirring. Stir for a minute, return to heat continuing to take pan on and off heat till almost done. Take off heat, add a tsp of sour cream and stir into eggs.
Divide eggs amongst 2 low carb tortillas, divide bacon and cheese and enjoy!
