Keto Avocado Margarita

These surprised me! I really didn't expect to like them! Something about a creamy 'Rita was a turn off for me. But I wanted to give them a whirl cuz I'm a big multi talker-Booze AND healthy fats? It's a win win! Anyhow, They are actually amazing! They are not too thick or gloppy and TBH, they don't really need the tequila! (What am I saying??) For a virgin version just stop before you off the tequila and last bit of lime. Maybe a splash of club soda. Delish AND good for you!

Ingredients

8 oz lime juice (I used Nellie and Joes bottled Key Lime juice.)
1 cup avocado (ripe and diced. I used frozen and it turned out great!)
7 tbs Swerve
6 oz water
4 oz tequila (blanco)
½ oz lime juice
Pink sea salt (Sue me, it looks cool!)

Method

Blend lime juice, avocado, Swerve and water in blender jar. (I used my Bullet) in blender till smooth.
Add tequila, extra lime and ice. Blend again.
Rim you glass, if desired by running a slice of lime around the rim of the glass and rolling in salt.
Garnish with avocado slice or lime. Salut!
