Keto Antipasto Skewers

All the best flavors of Italy on a skewer! Use your imagination on this one! If you don't like mushrooms sub cherry tomatoes! Don't like salami , try prosciutto or soppessata! This is a little kabob of all the good stuff on the antipasto platter from your favorite Red Sauce Joint! We drizzled the oil from the marinated mozzarella over it, but your favorite Italian dressing will work to!! PS this is a pretty appetizer for a New Years Eve Shindig! Ciao!

Ingredients
  

  • 8 slices Hard Salami (folded into quarters)
  • 4 dried tomatoes (cut into halves)
  • 8 Mozzarella balls
  • 8 Marinated Mushrooms
  • 8 green Olives
  • 2 Artichoke hearts
  • 2 cloves garlic

Method
 

  1. Skewer 1 mozzarella bal on skewer, follow with mushroom, sun-dried tomatoatrichoke heart, salami and ending with an olive. The olive and the cheese ball keep everything together on the skewer. Repeat with remaining ingredients.
  2. Drizzle with oil from Mozzarella balls.
