Keto Air Fryer Chicken Nuggets

True story: When I moved here 30 + years ago, I had never even heard of Chick-fil-a! And the first time a saw the sign, the ol' dyslexia kicked it, and I read it "Chick-A-Fil". I still call it that sometimes, but like a true Texas, I love it no matter what it's called! Here's my Keto rendition using an air-fryer!

  1. Cut chicken breast into 1 inch chunks
  2. In a bowl, pour pickle juice and almond milk together and stir. Add chicken and marinate for 1 hour.
  3. Combine bread mix, pork panko, garlic, paprika and salt and pepper. Whisk to combine.
  4. Remove chicken from brine and dredge nuggets in panko mixture, placing covered nuggets on air fryer tray.
  5. Cook on "Air Fry "setting for 10 minutes at 400*. You will probably need to cook them in 2 batches.
  6. Serve warm with dipping sauce!
