- Cut chicken breast into 1 inch chunks
- In a bowl, pour pickle juice and almond milk together and stir. Add chicken and marinate for 1 hour.
- Combine bread mix, pork panko, garlic, paprika and salt and pepper. Whisk to combine.
- Remove chicken from brine and dredge nuggets in panko mixture, placing covered nuggets on air fryer tray.
- Cook on "Air Fry "setting for 10 minutes at 400*. You will probably need to cook them in 2 batches.
- Serve warm with dipping sauce!
