Method
 

  1. Line an 8 x 8-inch with parchment paper.  Set aside.
  2. Preheat oven to 325*
  3. Stir the peanut butter, honey, and coconut oil together in a medium saucepan.  Cook over medium heat, stirring occasionally until the mixture reaches a simmer.  Continue to simmer for 1 minute, stirring often so that the bottom of the mixture does not burn.  Remove from the heat.
  4. Add the vanilla and salt, and stir until combined.
  5. Add in the shredded macaroons and almonds, and stir until completely combined.
  6. Press the granola firmly and evenly into the bottom of the prepared pan.
  7. Bake for 20 minutes or till golden brown.  Sprinkle chocolate chips evenly over top and return to the oven for a minute or so. Remove from the oven and using an offset spatula, spread melted chocolate over the top of bars. Cool and cut into bars.
