- Line an 8 x 8-inch with parchment paper. Set aside.
- Preheat oven to 325*
- Stir the peanut butter, honey, and coconut oil together in a medium saucepan. Cook over medium heat, stirring occasionally until the mixture reaches a simmer. Continue to simmer for 1 minute, stirring often so that the bottom of the mixture does not burn. Remove from the heat.
- Add the vanilla and salt, and stir until combined.
- Add in the shredded macaroons and almonds, and stir until completely combined.
- Press the granola firmly and evenly into the bottom of the prepared pan.
- Bake for 20 minutes or till golden brown. Sprinkle chocolate chips evenly over top and return to the oven for a minute or so. Remove from the oven and using an offset spatula, spread melted chocolate over the top of bars. Cool and cut into bars.
