Instructions
All live oysters must be kept in ice until use. You do not want the oysters to die before you shuck them. If the oysters open up, they are no longer good.
Preheat your smoker to 400*. Put a cloth glove on the hand you're going to hold the oyster in. To shuck your oysters, use an oyster knife and place it inside the hinge. Twist and pry until the oyster pops open. Remove the oyster from the shell and place back into one half, throw the other half away. Keep oysters on a half shell in the refrigerator until ready to smoke.
In a small bowl combine softened butter, chives, tarragon, and thyme. Grate in your garlic and mix well. Remove oysters from fridge and top with 2 tsp of herb butter and 1 tsp of parmesan. Place oysters in an oven safe pan that will fit in your smoker. Place pan directly into preheated smoker and let cook for 15-20 minutes depending on size. Remove from heat and enjoy!
