This is the stuff of childhood dreams. This Yankee girl would have lived on fluffernutters if my mom had allowed it. I spooned this stuff directly into my mouth while working on the recipe. In the bowl of a stand mixer, whisk egg whites, sweeteners and cream of tartar. Place the bowl over a saucepan with 2 inches of simmering water. Do not let the bowl touch water. Whisk constantly until sweeteners are dissolved and the temperature reaches 160* on a candy thermometer. This will take 4 or 5 minutes. Remove from heat and add vanilla. Using whisk attachment, beat on high speed till stiff and glossy.
Spread peanut butter thickly on 1 slice of bread. Spread fluff on the other side. Put slices together. Eat. Repeat.
