Instructions
Break eggs into a bowl, check for eggshells! Always crack eggs on a flat surface, you will get less bits of eggshells than if you crack them on the edge of the bowl.
Place a non-stick saute pan over medium-high heat. Add eggs and butter. Stir until eggs start to solidify and butter starts to melt. Remove from heat constantly stirring. Stir a minute, return to heat continuing to take pan on and off heat till almost done. Take off heat, add a tbsp of sour cream and stir into eggs.
Divide eggs amongst 10 low-carb Ketonia tortillas. Top with pork, cheese, and remaining sour cream. Roll and enjoy.
