Ketonia biscuits are so easy to make, it just a natural progression to use them in the waffle maker! They turn crisp and a bit melty from the cheesy center! They are a great snack or easy breakfast! We used a mini waffle iron but if you have a big one, no worries! You get to add more cheese and other goodies! This is one of my favorites!!

Instructions
If you have some of out Keto Freezer Biscuits in the freeze, now is the time to pop one out! They need to be defrosted for this recipe so try to think ahead and place one in the fridge to defrost the night before! You can also make a fresh batch of cheddar biscuits and freeze what you don't use!
If you use a mini waffle iron, cut the biscuit in 4 pieces. Depending on the size of your waffle iron, you might only need to half your biscuit.
Flatten the 4 biscuit pieces into round "pancakes".
Spray waffle iron with cooking spray so that it won't stick.
Place 1 round in waffle maker, place a tablespoon of cheese, a teaspoon of bacon and a sprinkle of chives in the center.
Place another round on top and press edges slightly. Close top and press slightly.
Waffles are done when they are brown and crispy, about 5 minutes.
Repeat with remaining waffle ingredients.
Serve with a dollop of sour Cream, if desired!
