Instructions
Heat cast iron skillet. Melt butter and swirl to spread evenly. Add onions and squash.
Lower heat to medium cover and cook for 12 minutes, checking to stir occasionally. Cook until squash is soft. Add garlic and cook until fragrant for 30 seconds or so. Stir in corned beef and spread mixture evenly in pan.
Cook on medium high till a nice golden brown crust develops on the bottom.
Top with a fried egg and serve!
