Instructions
Make Ketonia bread according to directions. Let rise for 30 minutes.
Divide into 6 pieces. Roll into 8-inch rolls. Place on a sheet pan, covered to rise for 30 minutes. Brush with egg wash if desired.
Bake for 15 to 20 minutes.
Combine pork panko, parmesan cheese in a rectangular Tupperware.
Combine mayo, Caesar dressing and herbs in a bowl.
Brush tenders with mayo mixture on both sides. Dredge in panko mixture. Place on foil lined rimmed pan (saves clean-up!)
Bake on 425* for 35 to 45 minutes or till tenders are crunchy and done through.
Meanwhile, combine minced anchovies, garlic, lemon and oil in a medium sized bowl. Set aside.
Toast walnuts on a sheet pan in the same oven with tenders for 5 minutes. Just till barely browned and you start to smell them. Immediately pour walnuts into oil (directly from the oven.) The heat from the walnuts cooks the garlic and anchovy slightly and mellows the flavors. Stir to combine. Let sit for a few minutes then add parmesan.
Now to build your Hero:
Slice each roll in half horizontally and toast in a broiler or toaster oven.
Place romaine leaves on bread.
Place 2 chicken tenders on roll and generously spoon walnut mixture on top of them.
Hail, well, you know. There goes your hero sandwich!
