Everyone pokes fun at the sweet potato casserole casserole with its ubiquitous marshmallows . But it's ubiquitous for a reason! We all love the spicy mashed sweets (We subbed kabocha squash but if you don't tell, they won't know the difference!) with the crunchy topping and oozing marshmallows! Instructions
Mashed Sweet Potatoes:
Preheat oven to 375°F. Grease a 2 or 2 1/2 quart casserole dish.
Microwave the squash for about 5 minutes. This makes it easier to peel. After peeling, cut squash in half and remove seeds. Cut into cubes and microwave till very soft approx 10 minues. Put hot squash into large bowl. Add butter, cream, cinnamon, swerve brown sugar and salt to the Squash and mash until smooth. Use a hand mixer, if desired, to make them extra smooth. Taste the potatoes and add additional seasonings, if desired.
Transfer the mashed squash to the prepared casserole dish.
Topping:
In a medium bowl, combine butter, brown sugar, almond flour, cinnamon and salt using a pastry blender or fork, then mix in pecans.
Sprinkle topping mixture over squash mixture. Sprinkle with marshmallows. Cover with foil and bake for 20 minutes. Remove foil and bake 5 or so more minutes, until marshmallows are melted.
Notes
**I make my marshmallows, it’s easy and you know exactly what’s in them, but I get it, it’s Thanksgiving and you’re crazy busy! If so, these are good too! Max Mallow Low Carb Keto Marshmallows by Know Brainer Foods - Classic Vanilla. I get them through Amazon.
