Instructions
Combine beef, onion, garlic, and jalapeños in a large skillet over medium-high heat. Break up beef and stir onions etc. Cook until meat is nicely browned and vegetables are translucent. Drain a bit of the fat if necessary. Add all spices and stir, cooking until fragrant 30 seconds or so. Remove from heat, stir in salsa and cheese. Let cool a few minutes while you make the sauce.
Place diced avocado in a blender or small food processor. Add sour cream, lime, and cilantro(if using). Combine till smooth and creamy. Add water if necessary to thin out. Refrigerate till used!
Lay tortilla on a flat surface, spoon ¼ cup or so of meat mixture (depending on the size of your tortilla!) roll the lower third of it. Roll tortilla from the bottom (meat) to top into a cylinder. Place on a plate with the flap side down on the plate. Continue with remaining meat and tortillas.
Heat skillet on medium-high heat. Add 2 tbs oil. Start frying the flautas on the bottom side till brown, this will keep them from trying to open when you turn them. Fry till golden brown and crispy on all sides! You can do several in a pan depending on the size of your skillet. Lay on paper towels to absorb excess oil and serve with avocado sauce, additional cheese, and sour cream if desired!
