Instructions
Slider Rolls
Combine all ingredients and Knead bread according to directions on the package. Let dough rest , covered, for 45 minutes.
Preheat oven to 375*. Butter a 8 x 8 pan.
After resting, divide dough into 9 equal portions. Roll into balls. Place in a buttered pan, flatten with the palm of your hand, cover and let rise for 45 minutes.
After rising, brush rolls with egg wash, sprinkle with parmesan, if desired, and bake for 20 minutes, till lightly browned.
Rolls will be stuck together. Once cooled turn rolls onto a cutting board. Slice through the middle of the rolls horizontally.
Raspberry Chipotle Sauce
In a small saucepan warm your oil on medium high heat. Brown the shallots in the oil, about 3-4 minutes. Add garlic and cook for about 30 seconds. Finally, add the minced chipotle and cook for about 1 minute. Add in vinegar, sugar, and raspberries, mash and bring to a boil. Reduce heat and cook on low for about 5-10 minutes. Add water if it gets too thick. Once cooked and about the consistency of barbeque sauce, strain the sauce and squirt in 1 tsp lemon juice to the liquid. Set aside.
The Meats
Flatten your ground beef into one large square.
Using the pan you made your sliders in, measure the patty to the same size as the pan. Sprinkle it with salt and pepper. In a frying pan larger than the meat patty, cook your beef until desired temperature. We cooked it for about 5 minutes on each side.
I’m going to weave my bacon because i’m a fancy ass show off, you don’t have to do this. If you choose to, do it before cooking the bacon.
If not, cook your bacon how you normally would to your desired crispiness.
Thinly slice one onion and sauté in a heated frying pan with oil on medium high heat. Cook until softened and brown.
Constructing the Burger
Remove rolls from the pan in one piece. Slice rolls horizontally through all of them. Spread sauce evenly on the bottom half of rolls. Place the burger patty on top followed by the cheese, then the bacon, then the grilled onions. Drizzle a tbsp. of raspberry chipotle sauce over the onions and place the top half of the buns on. Place the sliders back in the 8×8 pan lined with parchment paper.
Melt 2 tbsp. of butter and 1 tbsp. of the chipotle sauce and brush it over the top of the buns. Cover with tinfoil and reheat in the oven on 350* for about 20 minutes or until the cheese is melty and hot all the way through.
Using a large knife cut out each of the 9 sliders and enjoy!
