Instructions
Ketonia Buns
In a mixing bowl fit for a stand mixer, combine ketonia bread mix, water, eggs, yeast, honey, and butter. Mix on Medium speed for 5 minutes with a paddle attachment. Empty onto a clean surface and knead for 30 seconds or until you form a smooth ball. Place on a baking sheet lined with parchment paper and let rest for 1 hour, covered.
Preheat oven to 375*. Divide the dough into 10 equal sections, about 68g each. Roll 5 into little smooth balls and place back on the baking sheet. Press them down slightly to flatten. Flatten the other 5 portions completely, fold in the ends and roll into a cylinder shape. This make take a minute, just keep rolling and tucking until its a nice hotdog bun shape. Place hotdog buns into a greased 5x7 baking dish. Cover dough and let rest for another hour.
Bake the buns for 20 minutes or until the internal temperature reaches 200*. Let cool for 30 minutes and then slice.
Keto Blueberry Barbecue Sauce
Mince your onion, jalapeno, and garlic. In a small saucepan, heat oil on medium-high heat. Add minced onion, garlic, and jalapeno and saute for 3 minutes. Add in the bourbon, blueberries, ketchup, vinegar, swerve, molasses, and allspice and bring to a boil. Cook for 20 more minutes on medium-low heat or until thickened. Transfer to a bowl to cool while you prepare the burgers and hotdogs.
Burgers & Hotdogs
Heat yourgrill on high. Divide your ground beef into 5 sections and roll into balls, flatten slightly. Cut 5 full slices of tomato and 5 slices of onion. Mince the other half of your onion and tomato.
Place your hamburgers and hotdogs on the grill and sprinkle with salt and pepper. Close the grill and let cook for 5 minutes. Flip the burgers and turn the hotdogs and let cook for another 5 minutes. Add 1 tbsp of blue cheese on top of each burger and let melt for 2 minutes.
Hamburger: Place your blue cheese patty on the bottom half of your bun. Top with a slice of tomato and a slice of onion.
Hotdog: Place a hotdog in between the bun. Top with diced onion and tomato. Drizzle with 1 tbsp of blueberry barbecue sauce. Enjoy one of each!
