Instructions
Keto Ice Cream
Combine your almond milk and brown swerve in a medium saucepan over medium-high heat. Heat until slightly boiling and all the sweetener has dissolved. In a large, heat proof bowl, seperate your egg yolks from your egg whites and place yolks in the large bowl. Save the egg whites for another recipe. Remove your milk mixture from the heat and slowly ladle the hot milk into your egg yolks. Whisk continuously to make sure the eggs don't scramble. Once all the milk is whisked into the egg yolk, transfer the mixture back into the saucepan. Heat on medium-low for 5 more minutes to thicken. Don't let this mixture boil, if it starts to boil just lower the heat.
Strain your mixture over a bowl, let cool for 1 hour. We set our bowl into a larger bowl filled with ice water but you can also just put it in the fridge.
Once cooled, pour mixture into the Whynter Ice Cream Maker canister. Put the lid on and press "Start". Let the machine go for 1 hour. Once done, transfer to an airtight container and place in the freezer. This can be eaten right out of the machine if you enjoy soft serve.
Keto Waffle Cone
Preheat CucinaPro Waffle Maker. In a blender combine Ketonia mix, eggs, swerve, melted butter, almond milk, and vanilla extract. Blend for 30 seconds, scraping down the edges as needed.
Spray the hot waffle iron with nonstick spray. Pour 1/4 cup of batter into the center of the iron. Close the waffle iron and let cook for 2 minutes or until golden brown. Remove from hot iron with a spatula and immediately form into a cone or cup.
For the cone: Lay the hot waffle flat on a piece of parchment paper. Wet all the edges slightly with water. Place cone roller on top of waffle and roll waffle around it. Press the seams until dry. Add more water at the seams if necessary.
For the bowl: Lay the hot waffle on top of the lower bowland press the top bowl down over it. Let sit in bowl mold for 2 minutes while you make the next waffle
Keto Fruit Syrups
Heat your strawberries in a small saucepan over medium-high heat. Add 2 tbsp of water and 2 tbsp of liquid allulose. Heat until boiling. Boil for about 5 minutes or until reduced and slightly thickened. Let cool for 15 minutes in fridge. Now, you can choose to either blend this sauce in a small blender for a smoother syrup or leave it with the pieces of fruit. Transfer into a airtight container and let cool for 1 hour. Repeat this exact process with the blueberries.
Once your ready to assemble just scoop 1/2 cup of ice cream into a waffle cone and drizzle with strawberry & blueberry syrup. Enjoy!
