Instructions
Gyros
Process onion in food processor until well chopped. Turn it out on a towel and squeeze the juice from the onion.
Return onion to processor along with other ingredients process till it is a fine paste. Scrape down as needed.
Press meat into a large loaf pan.
Bake in preheated oven at 325* for 90 minutes or till 165* internal temp.
Carefully drain fat from pan.
Wrap a brick in aluminum foil. Set brick on meat and let sit for 15 minutes or so. Slice thin!
Tzatziki Sauce
Using a box grater, grate cucumber onto same towel, twist up towel and squeeze out as much moisture as possible. Mix together all ingredients except frying oil.
Zucchini Pancakes
Using the same towel place onion and zucchini in center and twist to squeeze the juices. Get it as dry as you can..
