Instructions
Preheat oven to 350*
First, make the crust. In a medium bowl combine almond flour, melted butter and Swerve. Using a fork or pastry cutter combine ingredients.
Pour crust into pan and press evenly over the bottom.
Bake for 12 minutes.
Meantime make the pumpkin filling. In a medium bowl whisk together pumpkin, Swerve, cream, egg, spice, salt and vanilla until fully combined. Set aside till crust comes out of the oven.
Pour pumpkin mixture immediately after taking the crust out. Careful the pan will be hot! Spread evenly over crust.
Return to oven for 20 more minutes.
Make the topping while the pumpkin bakes.
In a medium bowl stir together the mix, Swerve, Butter till crumbled. Stir in pecans.
When pumpkin comes out of the oven, sprinkle streusel over to of pumpkin and bake for a final (I promise!) 20 minutes.
Let cool and cut into bars.
