A taste of Jamaica, Mon! I had a Jamaican neighbor long ago that spent his Saturdays in the backyard perfecting his Jerk chicken. All day long, the smells that wafted over the backyard fence made me drool. He would marinate overnight Friday and grill low and slow all day Saturday over Pimento wood! He inspired my first Jamaica Me Crazy Party! There are as many Jerk recipes as there are Jamaicans! This is my humble version!

Instructions
Cut whole chicken into pieces. Or get a pre cut chicken. Place in large bowl or large zip top bag.
Grind any spices that ar whole or buy pre ground spices. Don't try to put whole spices in Bullet.
Place all ingredients except for chicken in Bullet blender and blend till smooth.
Pour marinate on chicken and massage into chicken. Cover bow with plastic and refrigerate overnight.
Preheat smoker to 225 or so.
Place chicken pieces on grill rack. Smoke for 4 to 5 hours or till 165* internally. I flipped my chicken at 2 hours and checked the temp. It took 4 hours total. Check every once in a while after 2 hours to make sure it doesn't overcook.
Let rest for 10 minutes and serve!
