Here in Texas, the end of February is usually Mardi Gras time! And that means Beads, Boobs, and Beignets! And now you can eat Beignets by the bowlful with this delicious cereal! Mini Beignets, generously sprinkled with powdered sugar and drowned in Almond milk (or your fave milk substitute.) Honestly, these are great without the milk too! Just like eating cereal out of the box! So laissez les bons temps rouler!

Instructions
Combine water, butter, salt and sweetener in saucepan. Bring to boil.
Remove from heat. Pour in bread mix all at one time and mix vigerously with a wooden spoon till combined
Put pan back on medium heat for 2 minutes. Continue to stir. This dries out your dough.
After 2 minutes put all dough in Kitchen aid and mix with paddle attachment briefly to cool dough slightly.
Pre heat deep fryer to 350*F
Keep one egg aside and whisk ammonium bicarbonate into it. Now add eggs, including the one with the ammonium bicarbonate and the lone egg white, one at a time, waiting till each egg is completely incorporated before adding next egg. Fill a large piping bag with the mixture
We are going to cut small bit of the beignet dough into the hot fat. You must be very careful. Don't let the bits of dough drop into the fat from to high up or they will splash and splatter. Perhaps wear long sleeves to protect your arms. Using a pair of scissors sprayed with cooking spray, cut the dough into half inch bits into hot fat. They should be about the size of marbles. You will need to fry them in batches. I used my Fry Daddy and I could fro 40 or so at a time.
Let them fry for 2½ to 3 minutes, gently stirring to make sure they brown evenly. Remove with a slotted spoon to a paper bowl lined bowl. Let cool.
Sprinkle with powdered sugar and eat as is or with your favorite milk substitute poured over it!
