The best salads have bacon and bread. This is a known fact. This salad pairs exquisitely with our pancetta and gruyere soufflé. This salad is extremely easy to throw together, tastes incredible, and makes an excellent solo dish or side.

Ingredients

bag spinach/spring mix

oz
thick slices of bacon
3
oz
Ketonia Baking Mix - Bread
or other low carb bread, broken into 1-inch chunks
1
shallot
minced
3
tbs
red wine vinegar
divided

tbs
olive oil

Instructions
Fry bacon in a frying pan till crispy.
Remove bacon, crumble and set aside for salad.
Keep 2 tbs bacon fat, and reserve any extra.
Sauté bread in bacon fat on medium-high and heat until crispy.
Toss 1 tbs vinegar on top of croutons.
Set aside croutons on paper towels to remove grease.
Without wiping out the pan, add remaining bacon grease and. Sauté shallot.
Combine with 2 tbs remaining vinegar, remaining oil, salt, and pepper to taste.
Toss all ingredients together with warm dressing.
Add cheese, tomatoes, etc as desired.
