Instructions
In a large cast-iron pan, dry roast cumin for a couple of minutes. Add oil, onion, peppers, garlic, thyme, parsley, cayenne and smoked paprika. Cook over medium-high heat until lightly browned.
Add tomatoes, saffron, harissa and salt and pepper. Add water till the mixture has a nice tomato sauce consistency. Cook on low for 15 minutes adding water if necessary.
Using a large spoon, make six wells in the sauce. Break one egg per well. Season with salt and pepper and cover for 10 minutes or so until eggs are set but still runny. Finally, sprinkle with feta and then serve!
