Keto Texas Toast Breakfast Sandwich

- 2 slices Ketonia Baking Mix bread cut thick (Texas Toast)
- 2 slices American Cheese
- 2 oz bulk breakfast sausage or bacon
- 3 eggs
- 2 tbs cream
- 1 tsp dill pickles
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- Shape sausage into a square roughly the same size as your bread. It will shrink slightly after cooking. In a nonstick pan, fry a few minutes on each side till cooked through and the internal temp is 160. Wipe the pan clean with a paper towel.
- Whisk eggs, cream, dill, salt, and pepper together. Soak each slice of Texas toast in egg mix for a few seconds on each side.
- Over medium heat, melt butter and pour remaining egg mixture into the nonstick frying pan and immediately add bread Placing bread with the bottoms of each slice touching.
- Cook till egg mixture is firm. Using 2 spatulas, flip bread and eggs over to brown the other side. That'll take a bit of practice!
- Cook until the toast is brown. Now, fold the egg on the side of the toast over the toast. I will be honest here.
- The first time I did this, I mutilated the folded egg.
- Fortunately, this is going to be the inside of the sandwich so no one will see it!
- At this point top bread with cheese slice then sausage and the second slice of cheese. Top with another slice of toast and heat on low until the cheese melts. This is one hearty breakfast sammy!
