This is a great day after St. Pattys day breakfast and a great hangover cure! Chunks of salty corned beef meld with sweet squash and brown crusty onions. Top with a fried egg and you have all the major food groups: Yumm and Ahhhh!

  • Heat cast iron skillet.  Melt butter and swirl to spread evenly. Add onions and squash.
    Keto Corned Beef Hash
  • Lower heat to medium cover and cook for 12 minutes, checking to stir occasionally. Cook until squash is soft. Add garlic and cook until fragrant for 30 seconds or so. Stir in corned beef and spread mixture evenly in pan.

  • Cook on medium high till a nice golden brown crust develops on the bottom.
  • Top with a fried egg and serve!
