Geri TerryYeah, pumpkin pie is great, but you can't eat a slice while driving! (Well, I guess you could, but DANG! What a mess that'd be!) Enter Ketonia Pumpkin bars! These are so dang good! And the pecan streusel is AMAZING! Great for dessert, a snack or, dare I say it? BREAKFAST!!!

Ingredients
- 6 tbs butter melted
- 2 cups almond flour
- ⅓ cup Swerve granulated
- 1 cup pumpkin puree
- ¾ cup cream
- 1 egg
- ½ cup Swerve granulated
- 1 tsp pumpkin pie spice
- 1 tsp vanilla
- ¼ tsp salt
- ½ cup Ketonia Baking Mix (Click for Free Recipe)
- ¼ cup Swerve brown
- 3 tbs butter softened
- ½ cup pecans chopped

Instructions
- Preheat oven to 350*
- First, make the crust. In a medium bowl combine almond flour, melted butter and Swerve. Using a fork or pastry cutter combine ingredients.
- Pour crust into pan and press evenly over the bottom.
- Bake for 12 minutes.
- Meantime make the pumpkin filling. In a medium bowl whisk together pumpkin, Swerve, cream, egg, spice, salt and vanilla until fully combined. Set aside till crust comes out of the oven.
- Pour pumpkin mixture immediately after taking the crust out. Careful the pan will be hot! Spread evenly over crust.
- Return to oven for 20 more minutes.
- Make the topping while the pumpkin bakes.
- In a medium bowl stir together the mix, Swerve, Butter till crumbled. Stir in pecans.
- When pumpkin comes out of the oven, sprinkle streusel over to of pumpkin and bake for a final (I promise!) 20 minutes.
- Let cool and cut into bars.
