Keto Biscuits and Chorizo Gravy

Basic Biscuits
- 1 bag Ketonia Baking Mix - Click for Free Recipe
- 2.5 tsp Baking Powder
- ½ tsp Salt
- 1.5 cups heavy Cream
- 2 tbsp melted butter for brushing biscuit tops
Chorizo Gravy
- 1 lb fresh mexican chorizo
- ½ small onion
- 1 ½ cup Heavy cream
- 1 tsp Better than Bouillon
- Salt and pepper to taste
- Hot sauce optional
Instructions
Biscuits
- Preheat oven to 400*
- Reserve 1 tbsp bread mix for dusting the work surface. Empty the rest of the bread mix into a large bowl. Add baking powder and salt. Whisk dry ingredients till well blended. Make a well in the center of dry ingredients and add cream. Using a spatula, combine ingredients till a cohesive ball is made. Empty contents onto the work surface and knead 3 or 4 times.
- Line a baking sheet with parchment paper
- Pat or roll out dough to ¾ to 1 inch thickness. Cut with a biscuit cutter (You can even use a drinking glass).
Chorizo Gravy
- Add chorizo and onion into a large skillet heated over medium-high heat. Cook for about 5 minutes or until it's thoroughly cooked. Transfer the cooked chorizo mixture to a strainer and strain out extra grease. Transfer back to the skillet and pour in the heavy cream, let simmer until slightly thickened (it will thicken as it cools). Mix in Better than Bouillon and salt and pepper to taste. Pour over biscuits. Add hot sauce if desired.
