Are you ready for the ultimate keto antipasti grilled cheese? I mean, what’s wrong with a good Italian sandwich, with all of the good things like ham, salami, provolone, mozzarella and tomato? This sandwich can be as simple if you want it to be or you can make it extra special, and that is where the antipasta part comes in!

  • Spread about ½ tablespoon butter onto one side of a slice of bread and sprinkle with a small pinch of oregano and garlic powder. Place bread buttered side down on a clean working surface, top with mozzarella, mortadella, soppressata, salami, prosciutto, pepperoncini, and artichoke hearts.
  • Spread another ½ tablespoon butter onto the second slice of bread and sprinkle with oregano and garlic powder. Place bread buttered side up on top of the sandwich. Heat a large skillet over medium heat. Place sandwich in the skillet and cook until the bottom slice of bread is golden and the cheese is starting to melt, about 4 minutes. Carefully flip the sandwich and cook until golden underneath, about 4 minutes more. Serve immediately.
